Gate 16 — real hard-candy equipment stack

date: 2026-08-21 status: candidate research result: OPEN — a real small-scale hard-candy line fits the 60 m² concept by area, but human/process clearances are not yet validated

Question

Can a real single-craft production stack physically fit inside Gate 15's ~60 m² candidate without cheating?

This Gate uses hard candy / humbug-berlingot production only.

Real equipment stack

Loynds documents a small-scale humbug/berlingot starter system with:

  • overall line footprint on stands: about 5.3 m × 0.665 m × 1.53 m;
  • stated system capacity: up to 100 kg per 10-hour shift;
  • stove;
  • cold table;
  • hot table;
  • mini batch roller;
  • mini rope sizer;
  • motorised humbug/berlingot former.

Manufacturer data is useful for physical bounds. It is not independent productivity evidence.

Published component dimensions

  • Stove: 0.40 × 0.40 m
  • Cold table: 1.00 × 0.50 m
  • Hot table: 1.00 × 0.50 m
  • Mini batch roller BR02: 1.30 × 0.37 × 0.63 m, up to 10 kg batch
  • Mini rope sizer RS02: 0.70 × 0.36 × 0.42 m, rated 75 kg/hour
  • Motorised humbug/berlingot former: 0.71 × 0.46 × 0.34 m, rated up to 100 kg/hour forming

The published starter-system rating of up to 100 kg per 10-hour shift is the more useful system-level capacity reference.

First finding — physical scale is plausible

Summing the simple equipment rectangles gives only about 2.22 m². That number is too optimistic because it ignores stands, operators and access.

The published full line envelope is about:

5.3 × 0.665 m = 3.52 m².

Gate 15 reserved 20 m² for production.

Synthetic access tests:

  • machine only: 3.52 m²
  • line + 1.0 m working aisle: 8.82 m²
  • line + 0.75 m access on both sides: 11.47 m²

Even the two-sided synthetic envelope uses only about 57% of the 20 m² production allocation.

So by area only, the real machine line does not kill the ~60 m² concept.

That is not a compliant floorplan.

Capacity comparison

The starter system is marketed at up to 100 kg per 10-hour shift.

The inherited Gate 1 stress benchmark is about 108.8 kg/week.

Do not conclude the weekly target can simply be made in one day. The manufacturer figure does not include our actual recipe quality, saleable yield, setup, cleaning, flavour changes, documentation, rejects, storage or operator count.

Safe conclusion:

> Commercial small-batch hard-candy equipment exists at a physical and nominal output scale compatible with the candidate node.

Geometry now matters more than area

A 5.3 m line creates a real layout constraint.

A 20 m² room can have enough area and still be the wrong shape.

For example, a 4 × 5 m production room cannot hold a 5.3 m straight process line without turning or reconfiguring it.

Gate 17 must therefore test actual dimensions, not only square metres.

Keep support functions outside production where possible

Production should not also absorb:

  • bulk ingredient storage;
  • finished-goods buffer;
  • receiving;
  • public back stock;
  • general administration.

That is why Gate 15 split the node into zones.

Equipment mass

The “mini” equipment is still real industrial hardware.

Published examples include roughly:

  • BR02: ~80 kg;
  • RS02: ~55 kg.

Bench strength, stands, floor loading, cleaning access and movement cannot be treated casually.

Support objects still unresolved

This Gate does not invent dimensions for:

  • racks;
  • bins;
  • finished-goods shelving;
  • transport cases;
  • sinks/handwash;
  • scales/payment;
  • public pick-and-mix bins.

Those remain TBD until we have real objects or a dimensioned concept.

What is real

A documented small hard-candy starter line exists at roughly:

  • 5.3 m × 0.665 m overall footprint;
  • up to 100 kg / 10-hour shift stated system output.

What is inference

That it can be integrated into the 60 m² FAF candidate while preserving compliant working clearance and all support flows.

Missing

  • exact operator clearance;
  • full electrical load;
  • cooker/stove spec;
  • floor/bench loading;
  • sinks/drainage;
  • ventilation;
  • real workflow timing;
  • finished-goods racks;
  • public bin wall;
  • receiving geometry;
  • jurisdiction-specific requirements.

Hard rule

> Never validate a layout by square metres alone. Check the longest machine/process dimension and actual movement paths.

Next Gate — dimensioned conceptual floorplan

Gate 17 should place the 5.3 m hard-candy line into a plausible ~60 m² shell and add:

  • receiving;
  • storage;
  • wash/clean;
  • finished goods;
  • glass boundary;
  • 14 m² market surface;
  • weigh/pay;
  • visitor edge.

Then test movement for:

  • two core operators;
  • Friday support workers;
  • customers;
  • receiving/exchange.

Do not call the drawing compliant.
